Codos de Larouco white wine is harvested manually in boxes, selected bunch by bunch. Its destemming and crushing is carried out at low pressure, softly and for a long period, so that its skins start to macerate. Its debourbage is carried out for 48 hours and its fermentation is natural, at low temperatures during 21 days. The winemaking process is careful, and it is tuned naturally due to the winter cold.
